June 13, 2022 When using garlic scapes, only use the smooth stem part of the scape. Cut them just before they flare out into a bulb and then start to taper down.
We grew garlic in the Logan Northside Neighborhood Gardens at the Fire Station location.
These were planted in October of 2021. They grow through the winter and will be harvested in late June to early July.
In order to get larger cloves to form in the ground, the scapes must be removed when they start to curl. The two 3 x 8 foot beds produced 3 pounds of untrimmed garlic scapes.
Many people like the garlic flavor these provide and others might prefer them blanched for 30 seconds then plunged in an ice bath to mellow the flavor. Saving the water from the blanched scapes would make a lovely addition to a soup broth. Freeze the scape broth in ice cube trays for later use.
Scapes can be used in egg dishes, stir fry, pesto and dried into a powder after dehydrating.
